Healthy Lunch Recipes

Everyone feels better with healthy lunch recipes. And even more so when they taste good, too.

Open-Faced Veggie Sandwiches

2 tablespoons olive oil
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon each of dried oregano and dried basil
1 eggplant, sliced thinly
1 zucchini, sliced
1 large onion, sliced
1 each, green pepper and sweet red pepper, both sliced
1/4 cup mayonnaise
2 tablespoons balsamic vinegar
1 teaspoon of your favorite mustard (I use Dijon)
4 slices bread, toasted
1 tomato, sliced thinly
4 slices of your favorite cheese

Combine oil, garlic, salt, oregano, and basil. Then add vegetables and toss to coat. Place on baking pans. Bake, uncovered at 425 degrees for 15 minutes, or until lightly browned. Stir occasionally.

Combine mayonnaise, vinegar and mustard and spread over toast. Place n a baking sheet. Top with vegetable mixture, tomato and cheese.

Broil 6-8 minutes or until cheese is melted.

Turkey Burgers

Add this burger to your growing file of healthy lunch recipes.

1 clove garlic
salt and black pepper (to taste)
2 tablespoons plus 1 teaspoon balsamic vinegar
2 teaspoons each of hot sauce and Worcestershire sauce
1 pound lean ground turkey meat
6 ounces lean ground sirloin
2 tablespoons olive oil
1 large onion, sliced thinly
4 whole-wheat buns or pita bread, toasted
In a small bowl, whisk together garlic, 2 tablespoons of the balsamic vinegar, Worcestershire sauce, and hot sauce.

Place the turkey and beef into a large bowl. Pour the garlic mixture over the meat. Form into 4 burgers. Cover and set aside.

Heat 1 tablespoon of the olive oil in a skillet and add the onion. Cook until browned, stirring occasionally. Add the teaspoon of balsamic vinegar and salt and pepper to the onions.

Season both sides of burgers with the oil and salt and pepper. Cook each side about 2 minutes.

Serve the burgers on buns or in pita bread. Add the caramelized onions. Other possible garnishes: lettuce, tomatoes, mustard,ketchup.
